Attend a game demo with Jose Souto

You can attend and enjoy Jose's seminar on game cookery

 On the 10th November 2010 the first of this year’s Game Seminars will take place at Westminster Kingsway College, and you could be there to meet H&C blogger and game chef Jose L Souto. The event will be sponsored by the country’s leading game dealer UK Game and supported by the British Association of Shooting Conservation’s 'Game On' campaign.

Jose Souto hosts seminar

Jose L Souto, acclaimed game specialist and Chef Lecturer in Culinary Arts at Westminster Kingsway College, will be hosting the Seminar which has become a regular annual event on game calendar.

Plan for the day

The seminars cover all aspects of small and large game from its identification and preparation to its background, history and cooking tips. The day is split into two lectures, the morning on feathered and small furred game, followed by lunch and the second of the lectures on venison. The morning lecturer will cover all the aspects of hanging, quality points, classification, recognition and preparation taking each species of bird and small furred game individually and speaking about it in detail. The afternoon lecture will cover all the deer species found in the UK with a demonstration on the skinning of a whole carcass followed by its butchery into joints and then taking them down even further to larder trimmed cuts.

Top chefs attend to learn

The Game Seminars are now in their eighth year and have brought together hundreds of people from far and wide to see the only event of its kind. Over the years, chefs from establishments such as The Sheraton Park Lane, The Landmark, The House of Commons, The Crown Plaza, The Peach Pub company, The Royal Garden Hotel and many more have sent and continue to send their chefs to learn about this special commodity. Many countrymen and women, as well as foodies and amateur chefs have also attended and found it both interesting and informative. The cost of this event is £75 this includes a three course game lunch in one of our restaurants and a colour booklet written by Jose Souto on Identification and Preparation of Game. Please book soon as there is a limited number of places. Concessions are available for Colleges and parties over five people. The Game Seminar will cover all the theory game elements for VRQ and NVQ 3. To book a place please contact Emily Evens at emily.evens@westking.ac.uk.
